Nordic Almond Granola
4 cups rolled oats
2 cups rice cereal
1 package roughly crushed graham crackers – I crush them with my hands as I’m opening the package
2 cups shredded coconut
1 – 6 oz bag sliced almonds (roughly 1 cup)
1 cup cashew pieces or chopped whole cashews
1/4 cup flaxseed (optional)
1/2 cup canola oil
1/2 cup honey
1/2 cup brown sugar
1 Tablespoon almond extract
1/2 tsp. kosher salt
Preheat oven to 250 degrees.
In large roasting pan mix all dry ingredients together. Whisk oil, honey, sugar, almond extract and salt together until blended. Pour over dry ingredients and knead together with clean hands until all evenly coated.
This is where you get a great sugar and oatmeal scrub for your hands. Turn on the warm water and rub hands clean. Bonus!
Place pan in oven for about 60 minutes. Set timer for every 20 minutes to stir granola. When mixture turns golden brown it is done. Remove from oven and cool in pan. Store in airtight container for 2-3 weeks.
Love to eat this right out of the pan while it is still warm.
